Keto "Magic" Crackers
What makes these crackers so magic? Why, it's the fact that when you eat them, you'll find that they taste so good you won't believe they are actually keto-friendly...but magically, they are!
½ cup Psyllium husk
¼ cup Chia seed (optional) whole or ground
¼ cup Flaxseed meal
¼ cup Parmesian cheese
½ tsp Salt
½ tsp Pepper
1 tsp Onion powder granulated
1-2 tsp Garlic powder granulated
½ tsp Thyme
Oil spray or butter for pan
1 1/2-1 3/4 cups water (varies)
Mix all dry ingredients; add in water slowly till you get a good consistency,
Bake at 350* F for about 45 minutes, then flip each cracker over to the other side. Bake another 20 minutes. Then turn heat off but leave crackers inside oven to allow them to "dehydrate". Remove once they are cool. Enjoy!
Tahini Bread (grain-free + keto-friendly!)
Those of you on a grain-free and/or low-carb diet don't have to go without the joys of bread! Try mixing in whatever herbs and cheeses best suit your tastes and enjoy!
4 Large Eggs
1 ½ cups Tahini
1 ½ tbsp. Apple cider vinegar
2 tsp. Himalayan sea salt
1 tsp. Black pepper
1 tbsp Fresh or chopped rosemary
1 tbsp Roasted garlic
½ cup Asiago cheese, small dice
¾ tsp Baking soda
3 tbsp Asiago shredded cheese (or you can adjust flavors/ingredients to what suits you)
Preheat oven to 350*. Grease a loaf pan, press parchment paper in pan and grease the parchment paper. This is heavy-duty dough. Mix eggs and tahini in a medium bowl, it takes some heavy duty stirring, but it will come together, I promise. Add the diced Asiago, roasted garlic, baking soda, rosemary, apple cider vinegar, and salt/pepper mix to combine. Pour the mixture into your prepared loaf pan, sprinkle the shredded Asiago on top, and place into heated oven. Bake for 35 - 40 minutes, until the bread rises, and golden brown on top. Remove bread from oven, let cool for 15 - 20 minutes, remove from pan/paper and slice.
Enjoy however you would regular bread!

These "Oopsies" are great for when you are in the mood for bread but don't want to fall out of keto! You can use it as a bun for an egg, bacon, and cheese breakfast sandwich or top them with whipped cream and berries. You can even make them into little "breakfast pizzas". Try sprinkling seeds on them before baking- poppy, sesame, or sunflower and slather with butter. Enjoy!
3.5 ounces of cream cheese
A pinch of sea salt
½ tbsp. psyllium seed husk
½ tsp. baking powder
Separate the eggs by putting the egg whites in one bowl and the egg yolks in another. Whip egg whites together with salt until very stiff. You should be able to turn the bowl over without the egg whites moving. Mix the egg yolks and the cream cheese well, add the psyllium seed husk and baking powder. Gently fold the egg whites into the egg yolk mix – try to keep the air in the egg whites. Form 6 large or 8 smaller oopsies on a baking tray. Bake in the middle of the oven at 300° F for about 25 minutes or until they turn golden.
